I would recommend you take any plastic off to get truer colors. What else is going on in the space? Can you take some more photos of the kitchen? The herringbone is busier but also more interesting, and timeless. The small subway tile gives the impression that it's warmer in tone and may not work well with your quartz. I am a fan of anything with less grout lines, and would consider using the quartz for the backsplash, or larger subway (though my personal preference is not subway). Unless you have something loud on the other side of the kitchen (I have a river rock fireplace wall) there's no reason why you can't go with something with a bit more energy like the herringbone.

I would suggest turning on some lights. This can change how everything looks.

If those are the 2 choices, then go with the chevron. You need something to break up all the white.

Out of these 2, I would go with the Chevron.

Have you visited your local independent tile stores? They will have large grouted sample boards that you can borrow to see how the installed tile will actually look in your space.

The rectagular tiles look like Bedrosian Cloe White - or very similar. If you’d like to see what they would look like in a kitchen similar to yours - there are few LONG threads re: Cloe White backsplashes - many that have faux marble countertops and white cabinets.

I’m using Cloe White for my backsplash - however, my lower permiter cabinets are rift sawn white oak (white double stacked uppers) + my countertop is busier (real Calacatta marble - busier than your countertop).

You may want something with a little more color.
